Ingredients
2 tbsp. Olive Oil
1 Sweet Onion, diced
2 Large Carrots, diced
2 Ribs Celery, diced
4 Tomatoes, roughly chopped
1 lb. Ground Moose Meat
3 Cloves Garlic, minced
1 Bunch Dark Greens (kale, etc), chopped
1 tbsp. Tomato Paste
4 Cups Stock (Beef, Chicken, Wild Game)
1 Can Cannellini Beans, drained
Dash or Two Worcestershire Sauce
Salt and Pepper
Directions
In a large Dutch Oven over medium heat, add in olive oil, onion, carrots, celery and tomatoes. Allow veggies to cook for about 5-7 minutes.
Next, turn up to medium-high and add in moose meat and garlic. With a wooden spoon, gently break up ground moose meat. Stir frequently to allow all the meat to cook through.
Reduce heat to medium-low to low. Add in greens, tomato paste, stock, beans, Worcestershire sauce, and salt and pepper to taste, and allow soup to slowly simmer for about 1 hour.
Serve it up with grated Parmesan cheese, good bread, and wine. and enjoy!
